Meals week of 2/2

Okay, so our week is super busy and I hypothesize I will look like this by about Wednesday!!

Well, Super Bowl weekend is upon us and I have selected two snacks for this event.  I know that the week does not start today but I realized last night that we did not have anything planned for dinner tonight.  I also managed to get my husband to actively participate in the meal planning for the week.  It is usually like pulling teeth to make him sit down and actually help me plan for the week.  However, he has had a change of heart after recently needing me to make some final decisions about the website but not being able to nail me down for a final decision.  Okay, enough I will quit ranting and and give you our meals for the week.

Saturday: Seared scallops with sautéed kale, I have been wanting to make this recipe for a few weeks.  I love scallops and we have a ton of Kale left over from the Coop last week.

Sunday: Crockpot Hot Wings, Our plan is to make half of them super hot for the guys and half with BBQ sauce for the girls.  We are also making Bacon Meatballs with Mango Honey Mustard Sauce which look super good. So I was convinced that I needed to add something green to our Super Bowl extravaganza so we are also eating Brussel Sprouts. Okay you will notice that we seem to be on a brussels sprouts kick and are eating at least twice this week.  I would have never thought my children would eat brussels sprouts but last week I did not make enough and my husband and I had to cut them off so we could have some for ourselves. Okay, so I decided to add one treat I have been holding in our que for a few weeks and it is completely sinful.  We are making drum roll………  Chocolate Bacon Almond Butter Bananas from Civilized Caveman.

I was hesitant to put collard greens on Monday night because they take quite a long time to prepare.  However, my plan is to make them the night before and leave them in the water and dutch oven.  Then I will just have to put them back on the oven to warm on Monday.  I will let you know how it goes and if they get slimy.  I sure hope not!!

Monday: Bacon Crockpot Roast and Collard Greens (this is pretty much the same recipe we use from Paleo Comfort Foods, however, I don’t use hot sauce and I top my finished greens with bacon), Apparently, collard greens are in season at the Co-Op and we have gotten some the last few weekends.  They are super good and chocked full of vitamins.

Tuesday: Creamy Chicken Casserole, Oh my goodness this is a throwback to the old days of making all in one casseroles with lots of creamy stuff.  I am super excited to make this recipe this week.

Wednesday: Chicken Sausage and Brussel Sprouts, Yep this is the second meal this week with brussels sprouts and this meal looks very easy.

Thursday: Hamburgers on lettuce wraps and Candied Carrots (Practical Paleo, I have found a new cookbook/Paleo reference and plan to write a review on it as soon as I am finished reading). I always ask my children what they would like for us to cook in the upcoming week well it never fails they want hamburgers. Needless to say… we have hamburgers every Thursday night.

Friday: Fried Chicken and Sweet potato fries: well this meal has easily replaced our Friday night pizza tradition and my kids also ask for this every week.  My daughter went to stay with a friend last Friday night and was disappointed that she would not be home for Fried Chicken night.

Lunches: We always send a serving of fruit and veggies with lunches each day.

Well, my youngest is getting her spacer for her braces this week and I have a feeling her mouth will be pretty sore.  Therefore, I am planning to send her to school several days this week with Annies Gluten Free Organic Vegetable Soup (I know it has corn but she really likes the soup and it will be easy for her to eat.  Also, I will add shredded chicken to the soup so she can still get some protein.)

Our son asked for Meatloaf Gone Wrong for lunch this week.

Snacks:  I am planning on my youngest having a really sore mouth this week so I am including some smoothie recipes for her this week that will offer her some protein but also taste good.

Creamy Chocolate Avocado Shake

Bacon Smoothie: Sorry but I can’t find the original location of this post so I just posted the recipe below.

Ingredients:

1 cup of coconut milk

1TB of cocoa powder

1TB of honey or maple syrup

1 banana

4 strips of cooked regular bacon (or 2 strips of thick bacon)

6-9 ice cubes

Paleo Granola

Okay, so this is what we will be eating this week.  As I worked on my grocery list for this week I also realized we are having bacon almost every day next week.  Well everything ALWAYS taste better with some bacon :)
